With fermentation complete, the beer is cooled down allowing the yeast to settle in the bottom of the fermentation vessel. This is then drawn off and is re-used for subsequent brews.

Yeast removed, the fermented beer is drawn off from the vessel and packaged directly into casks where Isinglass (from the sturgeon fish) is added to help ‘fine’ the beer. This carries any residual sediment and yeast to the bottom of the cask leaving the beer bright and ready for drinking.

At Copper Dragon, our cask ales are available in 9-gallon (72-pints) and 18-gallon (144-pints) casks.

Storing the Casks

Once packaged, the sealed casks are transported to our temperature controlled cellar before being delivered directly to our customers in one of six liveried-up Ford Transit Drays.

The physical process of brewing the perfect pint hasn’t really changed through the years however at Copper Dragon we use the latest and most technologically advanced methods ensuring that every pint of Copper Dragon ale is perfect every time.
